How to Make Healthy Blueberry Lemon Muffins

Store bought treats can’t compare with the experience and taste of making your own homemade delights. Store brought treats have several harmful vegetable shortenings and other harmful ingredients such as lard. Baking at home allows you to control the amount of oil and fat you have in your treats. Making muffins is a great way to start out on your homemade baking adventures and what better way to start than by making a more traditional taste better than in creating your own yummy Blueberry muffins. This yummy blueberry muffin recipe is made better by the inclusion of a zesty burst of lemon.

Tools you’ll need:

12 cup muffin tin
Large muffin baking cups
Dry measuring cup set
Liquid measuring cup
Measuring spoon set
Medium bowl
Large bowl
Whisk
Wooden spoon
Rubber scraper
Zester or grater
Ice Cream Scoop
Cooling rack

Ingredients:

1 cup All-purpose Flour
1 cup whole wheat flour
1/3 cup granulated sugar
3 teaspoons baking power
1 teaspoon salt
¾ cup skim milk
½ half cup canola oil
One egg – room temperature
1 lemon
1 cup Fresh or Frozen Blueberries

Preparation:

Step one: Preheat

Preheat oven to 400 degrees (note: use oven thermometer to reach correct temperature.)
Line a muffin tray with paper or fold muffin cases.

Step two: Mix dry Ingredients
Mix together All-purpose flour, whole wheat flour, granulated sugar, baking powder and salt.

Note: remember to remove flour from the flour package and place into bowl to allow air to move though the flour before use by using a spoon to place the flour into a bowl and level off with flat knife. This is done because flour tends to set in the package when its been packed and it needs time to breathe in order for your muffins to have a fluffier texture.)

Whisk to combine and set aside.

Mix wet ingredients:

In a large bowl mix together skim milk, canola oil and egg.
Whisk to combine and then set aside

Step Four: Zest the Lemon:

Before you zest your lemon, be sure to scrub the fruit with a sponge. Rinse it well and dry. When removing the skin from the lemon, be sure to take off the thin outer colored portion only and leave the white pith on the fruit.

Zest your fresh lemon using a zester and scrape off the upper most yellow lemon skin only onto a cutting board and set aside.

note: this recipe does not use lemon juice and should not be included in the finished product.)

Step Five: Combine

Combine flour mixture into the wet mixture in the large mixing bowl with wooden spoon. (Note:Batter should be lumpy.) Fold in Blueberries with rubber scraper.

Step Six: Garnish
Fill muffin tin with mixture using an ice cream scooper to ensure even amounts.
Sprinkle with turbinado sugar.

Step Seven: Bake

Bake for 18 to 20 minutes in the preheated oven until done.
Remove from muffin tin and cool on a wire rack.

Please note: cooking times are just a guide and you should go on how your muffins look and feel in order to better judge the complete cooking time needed because over temperatures vary. So, after cooking be sure to make a note of the total cooking time and make a note for future use.

This recipe uses several fresh and low fat ingredients.
